Someone in the distant past had a bright idea. When a creamy yellow skin forms on the surface when making soy milk he did not throw it away. Instead the skin is lifted up and dried. Later it can be soften with water and it can be used for a variety of dishes.
This dried soy milk skin is called "foo chuk" and can be found in most Chinese grocery shops. It is golden yellow in colour and usually sold in sheets. As it is soy milk skin which is formed when the soy milk is heated at a constant temperature just below boiling point it is full of proteins.
Its convenient and yet nutrituous.
